Moderately deep ruby-red, slightly lighter on the rim. This has a powerful and alluring bouquet with aromas of marinated cherry, raspberry coulis, deep floral, dark herb, spice and savoury hints. Medium-full bodied, aromas of marinated cherry, fresh raspberry and coulis intertwined with dark floral, thyme, black pepper, nutmeg and dried shiitake. The wine is integrated yet proudly flaunting the rich herb, spice and underlying floral, with the support of tightly-weaved velvety tannins, carrying a long and seductive finish. This cellar-ready Bendigo Pinot Noir is enticing with concentrated fruit and a complex bouquet. Match with roasted duck and lamb over the next 7+ years. The fruit was cold-soaked for 5-7 days, then allowed to warm as the natural yeast ferment took place, an average of 28 days on skins, aged in 300-litre French oak barrels, 30% new oak in the final blend.
