Bright, even, pale straw-yellow. The wine is vigorous on the nose, packed with aromas of pineapple, lime and honeydew melon, interweave nettle and white spice. Medium-full bodied, concentrated aromas of pineapple, lime and an underlay of honeydew melon, entwined with verbena, nettle and a hint of spice. The fruit is ripe with a strong lime and acid tension core, persist on a powdery-textured mouthfeel and a refreshing finish. This Sauvignon Blanc shows a sense of the vintage brilliantly with concentrated fruit, vigorous yet calm acidity and a flavoursome, lengthy finish. Match with pan-fried flatfish and pork katsu over the next 4-5 years. Handpicked fruit, gentle skin contact for few hours then whole bunch pressed to tank, 54% inoculated in stainless steel tank, the remaining wild fermented in older French oak barrels, 14% alc, 5 g/l RS. 19-/20 pts (95 pts) Nov 2021 RRP $30
