Bright, very pale straw colour with slight green hues, clear on rim. Very delicate, soft and tightly bound aromas of gooseberries, limes and elderflowers show on bouquet. Dry to taste, this has subtly sweet and gently rich flavours of florals, gooseberries and citrus fruits that progressively builds with weight and body. There is an ethereal quality to the wine. A fine textural thread through the mid-palate leads to a soft, long finish with tantalising, interwoven flavours of limes and gooseberry fruit. Match this delicate and subtly interwoven Sauvignon Blanc with shellfish over the next 2 years. Fruit from the ‘Ski Slope' section of the vineyard hand-picked and WBP, and cool-fermented with 11% by indigenous yeasts in seasoned French oak to 13.5% alc. 1,232 cases made. 17.5-/20 Mar 2012 RRP $26.95
