Bright, pale yellow, even colour throughout. The nose is softly-full, inviting and elegantly presented, aromas of crunchy green apple, lime juice and zest, elderflower and mineral notes. Medium-bodied, medium dry to taste, nuances of green apple, lime juice and zest have ripeness and balance, subtle elderflower floral and mineral unveil, linger with aniseed and crisp acidity. The sugar provides a plush palate, along with threads of slightly chalky phenolic. Acidity and sugar are in perfect balance, leaves the palate with a flavoursome, refreshing closing. Match with spicy Asian and Mexican fare over the next 6+ years. Handpicked, whole bunch pressed, free-run juice (73%) fermented cool in stainless steel, the rest of pressings fermented in older French oak in warmer temperatures. 11% alc, 31 g/l RS. 18.5+/20 pts (94 pts) March 2021 RRP $32
