Bright, straw-yellow, even colour throughout. The nose is complex, expressing a flinty bouquet overlaying white blossom, stonefruit, beeswax, mead and minerals. Medium-full bodied, off-dry to taste, aromas of apricot, baked apple intertwined with jasmine, beeswax, honey, flinty minerals and a touch of ginger. The complex flavours are harmonious; radiant acidity enlivens the palate, flows with good energy and carries crunchy minerals to a crisp, moreish finish. Match with salted cod brandade and crispy pork belly over the next 12+ years. Fermented to 13% alc, 18.5 g/l RS, fermentation arrested by cooling, rested on lees until spring for bottling, then aged two years in bottle. 19/20 pts (95 pts) Aug 2023 RRP $50
