Very full, saturated, black-hued purple-red colour. This has a very refined, tightly bound nose of ripe blackberries, blackcurrants, cassis and subtle mint herb elements that grow in depth and intensity in the glass. Subtle lifted notes of spices and oak add to the fruit detail. The concentration and elegance is a feature of the aromatics. Medium-full bodied, tightly concentrated but sumptuously rich and sweet flavours of blackcurrants, cassis and mint reveal a complex layering of cedary oak, along with savoury meat and game elements. The fruit richness is supported by very fine-grained, powdery tannins and framed by significant extract that grows to fill the mouth. The wine has excellent acid pose and energy, which adds to the fruit sweetness, and the flavours lead to a fulsome, long, lingering finish of blackcurrants, green olives and game. This is a powerfully rich and sweet fruited Cabernet Sauvignon with considerable structure and complexing game notes. Match with casseroles and lamb shanks over the next 7-10 years. Hand-picked fruit from the ‘Trust’ vineyard fermented with whole berries, and a portion indigenous yeast fermented in ‘Integrale’ rotating barrels to 13.6% alc., the wine spending 15 days on skins post ferment and aged 15 months in 33% new oak, 80% French and 20% American. 18.5/20 May 2015 RRP $49.95
