100% Cabernet Sauvignon from the ‘Trust' vineyard, hand-picked, given a cold soak and fermented to 14.0% alc., the wine aged 15 months in 78% French and 22% American oak, of which 43% was new. Full, very dark, deep, purple-hued black-red colour. This has a very rich and deeply aromatic nose of ripe blackcurrant Cabernet Sauvignon fruit aromas, expressed with great purity. Subtle notes of black plums, oak spices and liquorice emerge, adding detail and fine interest. Full-bodied, bold, rich and ripe flavours of blackberry and blackcurrant fruits show with succulence and lusciousness, enlivened by acid piquancy. The extraction is significant, providing a fine, grainy palate line, driving the flavours. Blackcurrants, plums, spices and oak cedar notes show on a long and sustained finish. This is a beautifully defined, bold, ripe Cabernet Sauvignon with fine structure and line. Serve with roasted and grilled beef or lamb over the next 8-10+ years. 19.0-/20 Nov 2012 RRP $45.00
