Cabernet Sauvignon from 15 y.o. vines in the ‘Mere Road’ vineyard, hand-picked, given a cold soak and fermented with whole berries to 14.0% alc., the wine aged 15 months in 29% new French oak barrels. Full, deep, impenetrable black-red colour with youthful purple hues. The bouquet is tightly held with intense aromas of blackcurrant fruit with black ink, minerals and iron-earth notes, along with smoke and toast, unfolding suggestion of leaf and cigar box complexities. Medium-full bodied but elegantly proportioned, pure blackcurrant, cassis and leafy flavours form a seamlessly smooth-flowing palate core. The tannin extraction is extremely fine-grained and is beginning to soften into silky textures and line. Some acidity is noticeable, lifting the fruit aromatics. Subtle leaf, cigar-box and savoury herbs show the beginnings of secondary development and lead to a long, refined finish. This is an elegant and refined, pure fruited Cabernet Sauvignon beginning to develop cigar-box complexities.
