Garnet-red colour with some depth, lighter on the rim. The nose is softly full with complex savoury dark-red berry fruit aromas interwoven with dried herb and some undergrowth and earthy notes, lifted by a touch of volatility. The aromatic unfold a rich amalgam of game and cedar, showing secondary complexities. Medium-full bodied, the palate has rich and sweet flavours of savoury dark-red berry fruit entwined with notes of dried herbs, game and undergrowth, along with fragrant red florals and some volatile nuances. The fruit is mouthfilling and shows plenty of energy, and is supported by fine-grained tannin structure, with fresh, lacy acidity lending tension and drive. The flavours carry to a lingering savoury finish. This is a rich-fruited Pinot Noir with savoury secondary flavours of dark-red berry fruit, dried herbs, earth and undergrowth on a fine-textured’ lively palate. Match with coq au vin and slow-cooked game meat over the next 4 years. Waipara Valley fruit indigenous yeast fermented with a portion of whole bunches to 14.0% alc., the wine spending approx. 3 weeks on skins and aged 18 months in French oak. 17.5-/20 Apr 2018 RRP $21.99
