Bright, light golden-yellow colour with slight lemon hues, paler edged. The bubble is fine and persistent. The nose is rich with well-proportioned and deep aromas of white stonefruits expressed with clarity and finesse. The fruit is melded with a soft, positive layering of bready and yeasty autolysis. The nose unfolds white floral and mineral elements with aeration. Medium-bodied, the palate is elegant and softly concentrated with flavours of white stonefruits and white florals, entwined with subtle bready and yeasty autolytic detail. The mouthfeel is fine-featured with balanced, refreshing acidity and refined phenolic textures providing a smooth flow. The mousse is creamy, adding to the finesse, and the wine carries to an elegant, lingering finih of white stonefruits, bready notes and minerals. This is an elegantly concentrated, fine, creamy textured Blanc de Blancs Champagne with white stonefruit and floral flavours and subtle bready autolysis. Serve as an aperitif, with canapes and seafood over the next 3+ years. 100% Chardonnay fermented to 12.5% alc., with 5 g/L dosage, the wine aged 3 years on lees. 18.5/20 Apr 2017 RRP $60.00
