Full, deep, golden-yellow colour with some orange hues. The bouquet is firmly concentrated and densely packed with aromas of ripe yellow stonefruit, oranges and crystallised fruits with a complex core with nuts, herbal nuances and sappy, spicy oak elements. Very sweet to taste, the palate is oily in texture with an unctuous mouthfeel. A firm core of ripe citrus fruit and stonefruits, herbs, honey and crystallised fruit melds with nutty, oak. The palate has power and density with some alcohol emerging to carry the wine to a long fish with nuances of bitter herbs, green stonefruits and honey. This is a soft, unctuous botrytised Sauvignon and Semillon blend with honied stonefruit flavours and oak sappiness. Match with paté, baked desserts and steamed puddings over the next 5-6 years. Botrytised Sauvignon Blanc and Semillon from 4 sites picked over multiple passes, foot-stomped and soaked for 5-7 days, and fermented in new French ‘Damy’ barrels to 11.8% alc. and 254 g/L RS, and aged 10 months in oak.
