A blend of Chardonnay, Pinot Noir and Pinot Meunier from Marlborough and Hawke’s Bay, fermented in stainless-steel to 12.0% alc. and 6 g/L RS, the wine undergoing 100% MLF and then aged a minimum of 3 years on lees. Bright, pale golden-yellow colour with some depth, and a fine, gently persistent bead. This bouquet is softly deep with concentrated and complex aromas of yellow stonefruits, savoury aldehydes, nuts and bready yeast, revealing some toastiness with aeration. Off-dry to taste and medium-bodied, openly accessible and rounded, complex flavours of stonefruits, nuts, and bready yeast feature on the palate. The mousse is soft and the dosage brings sweetness and breadth to the mouthfeel. A dry, phenolic line gently guides the wine to a dry finish with a yeasty and toasty amalgam. This is a dryish, open and complex-flavoured Methode Traditionnelle with yeasty and toasty interest. Serve with white meat dishes over the next 18 months to 2 years.
