Pinot Noir from Domaine de Treille and Domaine de Martinolles in the Aude Valley, vines 25 y.o., destemmed and given a cold soak, and fermented with one-third by carbonic maceration to 12.5% alc., and one-third aged 6 months in French oak. Medium deep ruby-red colour with slight garnet hues, lighter on rim. The nose is soft and full with gentle raspberry fruit and red floral aromas infused with savoury, earthy elements. There is good depth, with spiced plum and dried herbal nuances unfolding with aeration. Medium-bodied, plush and softly luscious fruit flavours of raspberries and dark red plums feature with earth and herb elements. The mouthfeel is moderately full, mellow and smooth-flowing with supple tannins lending some weight and depth, carrying through to a dry, rounded finish. This is a soft and mellow Pinot Noir with gentle, juicy raspberry fruit and earthy flavours. Match with tapas, pasta and pizza over the next 2-3 years. 16.5+/20 Dec 2014 RRP $25.00
