Bright, light straw-yellow colour, lighter on the rim. The bubbles are moderately fine and very persistent. The nose is very fresh and up-front with aromas of white florals and stonefruits along with piquant yeast and bready autolytic elements. This is delicate and has good aromatic intensity. Off-dry to taste and medium-light bodied, fine flavours of stonefruits and florals show with a gentle sweetness and richness. The flavours unfold nuances of bread and toast, the autolysis quite restrained, adding background detail. Rounded and fine textures provide a smooth-flowing mouthfeel and structural finesse that carry to an elegant and light, bready finish. This is a very gentle and soft off-dry Champagne with delicate floral and stonefruit flavours and background autolysis. Serve as an aperitif and with gently spiced foods over the next 2 years. A blend of 38% Chardonnay, 37% Pinot Noir and 25% Pinot Meunier, fermented to 12.0% alc. and 28 g/L dosage, the wine aged 3 years on lees. 18.0-/20 Jan 2016 RRP $70.00
