Kate Radburnd has aimed for more floral lift to the fruit to distinguish the Instinct wine from the CJ Pask stablemates, and this has been achieved by the use of whole bunches in the ferment. All of the fruit is sourced from the Gimblett Gravels, and the wine following vinification to 13.5% alc, was matured in oak for 9 months. Considerable work in ensuring moderate tannin levels have been successful. Medium ruby-red in colour, the bouquet is redolent of violets, white pepper and spices, all in harmony. Elegant in structure, the palate has density, but is soft and supple. The wine has a youthfulness, and the palate will continue to reveal much more over the next 3-4 years. An excellent wine to go with Middle Eastern and Asian dishes as well as tomato-based pastas and pizza. 17.5+/20 Oct 2010 RRP $22.50
