Bright, light crimson, even colour throughout. The nose is softly rich, with aromas of deep floral overlaying raspberry, cherry, herb and spice. Medium-full bodied, aromas of raspberry and cherry melded with thyme, black pepper and savoury hints. Tangy acidity flows smoothly with creamy and fine-textured phenolics grip, hauling deep roses to a dry, savoury, appetizing finish. This savoury, food-friendly Rosé is juicy with substance and a chewy palate. Match with pork katsu and duck rillette over the next 2-3 years. Pinot Noir fruit from Gibbston, destemmed, macerated on skins for 5 days, fermented with indigenous yeasts and lasted for 1 month, left on lees in 52% stainless steel and 48% older French oak barriques for a few months. 13.5% alc, 2 g/l RS.
