Bright, even, pale yellow. The nose is bright and softly full, filled with citrus, stonefruit, blossom and spice. Medium-bodied, dry to taste, aromas of lime, lemon and its zest entwined with greengage plum, lime blossom and ginger dusting. The fruit is soft and sweetly presented with an excellent balance of vibrant acidity, flows with good energy on a mineral-textured mouthfeel, very lingering and appetizing. Match with clams and pan-fried sole fish over the next 6+ years. Fruit from Lowburn, approx 25% were foot-stomped, left on skins for 12 hours, whole bunch pressed, fermented with indigenous yeast in stainless steel 75% and older French barriques, rested on lees for 4 months. 12.5% alc, 9 g/l RS.
