Brilliant, very pale straw-yellow colour with slight green hues on rim. The nose is full and voluminous with aromas of fresh gooseberries and passionfruit, along with minerally lees elements that add interest and detail. Dry to taste and medium-bodied, the flavours are tightly bound, with gooseberry and passionfruit notes forming a concentrated core. The palate is underlined by firm, chalky textures combined with brisk, racy acidity, resulting in a taut, near-austere mouthfeel. The wine carries through to a firm, thirst-quenching minerally and textural finish. This is a tightly bound Sauvignon Blanc with mouthwatering chalky textures. Serve as an aperitif, with seafood and with goats cheese over the next 2+ years. Fruit from the ‘Grenhough’ and ‘Morison’ vineyards, Hope, tank fermented, with 3% in new French oak with solids and indigenous yeasts, to 13.55% alc. and 2.4 g/L RS.
