Bright, pale yellow, even colour throughout, light effervescent in the glass. The nose is softly full, nuances of white stonefruit, green apple underlined an amalgam of spices with a hint of honey and minerals. Medium-light bodied, the palate is bright and invigorating, aromas of green apple with a touch of honey emphasised by delicate spices leaves a tingly sensation. Focused acidity is soft, and smooth-flowing with chalky minerals lends a clean and refreshing dry finish. This is a dry, refreshing, summer days Chenin Blanc with leading flavours of green apple, honey and spice on a smooth-flowing mineral line. Match with pork katsu and dim sums over the next 3 years. Handpicked, whole bunch pressed to tank. The juice was fermented in neutral oak barriques and neutral oak puncheons and tank; puncheons portion wild fermented with 12 g/l RS remaining, the rest was inoculated with organic yeast and fermented to dry. 13% alc.
