Made from Dijon clone fruit given a cold soak, wild yeast fermented to 13.5% alc., the wine aged in 25% new French oak for 11 months. Light purple-hued ruby-red colour, this has a delicate, ethereal bouquet of cool red berry fruits with herbal notes and some toasty, charry oak. A lighter bodied wine with tight cherryish fruit flavours, the acidity is prominent and combines with the tannin to provide a firm, slightly lean, but fine textured palate. There are dried herb notes and hints of tobacco along with a little sappiness that add interest. The wines finishes with a sweet fruit flourish.
