Bright, pale straw-yellow colour with slight green hues, and a strong, persistent bubble. The nose is fresh and clean with tightly bound aromas of white stonefruits and florals, green apples and subtle hints of yeasty autolysis, unfolding nuances of herbs and nuts, along with chalky suggestions. Dry to taste and medium-bodied, the mousse is soft and light in effervescence, and the fruit is tightly bound, showing apple and stonefruit flavours. The mouthfeel is crisp, dry and refreshingly zesty. The wine follows a very fine line with a drying phenolic thread, revealing delicate herb and nutty nuances, and carries to a light, dry finish. This is a tightly bound, dry and mouthwatering cava with flavours of apples, stonefruits, nuts and herbs. Serve as an aperitif and with seafood over the next 2+ years. A blend of Xarel-lo, Macabeo and Parellada from the Penedes and Sant Sadurni d’Anoia fermented to 11.5% alc. and aged in bottle for 14 months. 16.5+/20 Oct 2015 RRP $24.95
