Dr John Forrest's low alcohol Sauvignon Blanc, utilising some secret viticultural techniques to ensure full-flavour. Fermented to 9.5% alc. and 11 g/L rs. Bright, very pale colour with hints of straw, near colourless. This has a light and shy nose showing ethereal gooseberry, lime, herb and mineral aromas, attractively pure and clear. The wine is dry on attack, with zesty, crisp acidity featuring on the palate. Light, but definite flavours of gooseberries and minerals show, and the acidity adds a lively, luscious aspect. The finish has some sweetness evident, enriching the mild gooseberry fruitiness, but there is sufficient acidity for a clean, zingy finish. A surprisingly dry, clearly varietal Sauvignon Blanc with a restrained expression. Match with Asian cuisine over the next 18-24 months. 5,000 cases made. 16.0+/20 Dec 2011 RRP $20.00
