Bright, even, very pale yellow. The nose is gently full, with aromas of passionfruit entwined with citrus, cut herbs, elderflower and white spice. Medium-light bodied, aromas of passionfruit and grapefruit melded with elderflower, cut herbs and white pepper. Mouthwatering acidity carries subtle minerals and phenolics with a light texture. This Sauvignon Blanc has a classic expression, with subtle spices, minerals and a fine texture. Match with green-lipped mussels and pan-fried sole over the next 3-4 years. Machine harvested, fermented cold in stainless steel to 12.5% alc, 3.8 g/l RS.
