Sauvignon Blanc from the Rapaura and Renwick areas, dried on straw beds for approx. 5 weeks to 38° Brix and fermented 55% in stainless barrel and 46% seasoned American oak to 13.8% alc. and 90 g/L RS. Moderately deep, brilliant straw-yellow colour with light golden hues. The bouquet is elegantly concentrated, unfolding delicate waves of ripe green stonefruit and herb aromas, entwined with marmalade, tropical fruits and honey. Very sweet to taste, the palate is finely proportioned and poised with a soft, dense core of ripe green stonefruits, marmalade and honey. The richness builds but is balanced and poised with lacy acidity, and the wine flows with a subtly smooth, unctuous line, the mouthfeel piquant and lively, retaining excellent freshness and cut. The wine has drive and carries to a very long and sustained finish. This is a beautifully elegant, tightly bound and piquant Sauvignon Blanc-based dessert wine.
