Bright, even, light golden yellow colour, lighter on rim. The bouquet very individual and distinctive with tightly concentrated aromas of ripe citrus fruits entwined with gooseberries and nectarines, along with melons and green peas and a honied element. Very sweet to taste, attractively lifted flavours of tropical fruits and honied melons are lifted with a melange of herbaceous and exotic floral notes. The mouthfeel is lusciously rich and unctuous, but laced with bright, lively acidity that offers a degree of balance and cut. The palate flows with good energy and liveliness to a smooth, densely concentrated finish with freshness and length. This is a rich and individual, decadent dessert wine showing its Sauvignon Blanc heritage. Serve with fruit-influenced and baked desserts over the next 5+ years. Sauvignon Blanc at 23° Brix and 42° Brix on first and second harvest respectively, laid out on racks covered with straw for 4-5 weeks to dehydrate, and fermented to 11.0% alc. and 165 g/L RS.
