Hand-picked whole bunches of Sauvignon Blanc, picked at 21°Bx, laid out on beds of straw in a greenhouse for 4-5 weeks to dehydrate, concentrating the sugars to 40°Bx. Fermented in seasoned oak to 11.0% alc. and 130 g/L rs. Brilliant, full, light golden-yellow colour, a little lighter on rim. The nose is tight and a little restrained in expression, but shows deeply concentrated aromas of ripe stonefruits with a little dried herb and hints of wild honey and nuts, Very sweet, intensely concentrated flavours of yellow stonefruits, tropical fruits and honey are complexed by subtle nuances of Sauvignon dried herbs. This has great richness with density and a packed core that is driven by firm, racy acidity. A thread of phenolic texture is enveloped by the fruit depth and sugar, and this leads to a long, concentrated and energetic finish of ripe stonefruits and honey. This concentrated and firmly rich dessert wine has excellent acidity. It will match foie gras and rich desserts and puddings over the next 4-6 years. 900 bottles made.
