Bright, even, very pale straw-green colour, near colourless on rim. The nose is very fine and tightly bound with concentrated aromas of gooseberries and fresh, piquant herbs, green apples and grassy notes, revealing white florals and thirst-quenching minerally elements in the glass. Dry to taste and medium-full bodied, concentrated and intense flavours of gooseberries, grass and apples show good depth and a firm core. The palate possesses a fine phenolic line with crisp, refreshing acidity enlivening the mouthfeel. The acidity enhances the thirst-quenching minerality, and the wine flows with plenty of energy, carrying through to a long, concentrated finish. This is a concentrated Sauvignon Blanc with intense fruit, fine textures and mouthwatering minerality. Serve with seafood and Pacific Rim fare over the next 2 years. Fruit from vines on elevated clay gravel soils and ancient river gravels in the Southern Valleys, cool-fermented to 13.5% alc. and 2.3 g/L RS, and TA 7.5 g/L, the wine aged on fine lees, with a small portion undergoing oak maturation. 17.5/20 May 2015 RRP $24.95
