Bright, light golden-hued straw-yellow colour, lighter on rim, the bubbles very fine with modest persistence. This has a full, broad and deep nose with densely packed aromas of yellow stonefruits integrated with bready, yeasty autolysis and complex nutty and aldehydic nuances. Dry to taste, soft, full and up-front flavours of yellow stonefruits and bread yeast are complexed by a little earthiness. The palate follows a fulsome, grainy textured palate with a noticeable phenolic line. The mouthfeel is fresh and crisp from mouthwatering acidity, and the wines flows with good vigour, leading to a dry, textured finish with savoury and sour aldehydic elements. This is a fulsome, savoury and textured Cava sparkling with flavours of yellow stoneefruits, yeast and aldehyde complexities. Serve with antipasto and white meat dishes over the next 2+ years. 40% Xarel.lo, 20% Macabeu, 15% Parellada, 15% Chardonnay and 10% Pinot Noir from the Upper and Central Penedes, hand-picked and fermented to 11.5% alc., the wine aged on lees for over 42 months, disgorged February 2013. 1,200 dozen made. 17.0+/20 Jul 2014 RRP $20.00
