A blend of Xarel.lo, Macabeu, Parellada, Chardonnay and Pinot Noir from the High and Central Penedes, hand-picked, and fermented, the Chardonnay in French oak, to 11.5% alc., the wine aged over 36 months on lees, disgorged December 2013. Full, light golden-hued straw-yellow colour, with a very persistent bead of moderately fine bubbles. The bouquet is intense and elegantly presented with lifted, pure white and yellow stonefruits and delicately interwoven yeast autolysis, forming a fine and tight core. Subtle, complexing nutty and toasty nuances add detail, the nose youthful and fresh. Dry to taste, the palate features very refined white floral and stonefruit flavours entwined with delicate bready, yeast notes. The fruit is subtly sweet and rich, balanced by soft acidity, the mouthfeel creamy in texture from the soft effervescence. The wine carries to a refined, lingering finish. This is a very elegant and fine-featured, pristine Cava sparkling wine. Serve as an aperitif and with seafood over the next 3 years. 465 dozen made. 18.5/20 Jul 2014 RRP $35.00
