Bight, pale yellow with depth, lighter on the rim. Bubbles are subtle and fine with persistence. This has a vibrant and elegant entry; lemon and pineapple aromas are slightly honied, melded with lemon peels, creamy autolysis and a hint of almond. Medium-bodied, aromas of pineapple, Meyer lemon intermix apricot and a touch of honey; unfolding whipped cream and toasted almond. The wine is harmonious with generous fruit and yeasty autolysis complexity. The mouthfeel is coated with chalky phenolics, integrated with lively acidity, carries the flavours to a long, refined finish. This is a serious Mehtode Ancestrale (pétillant naturale) with excellent purity of fruit and minerals, lively acidity and creamy feature. Match with pork cheek croquette and seafood in cream sauce over the next 3 years.
