Bright, medium straw-yellow with an onion skin hue, even colour throughout. It has a rich bouquet with aromas of quince, ripe pear, ginger, honeysuckle and a hint of mineral. Medium-bodied, dry to taste, aromas of quince, pear, melded ginger, hay and minerals, unfolding honeysuckle on the finish. The fruit is elegant and fresh with excellent brightness and energy; a phenolic grip contributes a grip and savoury elements. This partially skin-fermented Pinot Gris possesses expressive, bright fruit and spice with a savoury, textural layer of complexity. Match with salt cod brandade and chicken stew over the next 5+ years. Fruit from the home block, fermented and aged in 50% mixed-age oak barrels and two clay amphorae. Spontaneous fermentation and MLF, extended yeast lees contact of 6 months, the barrel portion was stirred weekly. One amphora was filled with whole berries and left on skins for 6 months.
