Moderately deep purple with a ruby-red core, lighter on the rim. The nose is full, with power and concentration, penetrating aromas of black cherry, plum, thyme, black pepper and spice. Medium-full bodied, aromas of black cherry and plum entwined with thyme, liquorice, black pepper, nutmeg and clove. Finely-weaved, ripe tannins contribute a grip reminiscent of dark cocoa and earthy minerals. Savoury mushroom and earth unfold, supported by lively acidity to a long, rich, lingering finish. This Pinot Noir shows concentration, black fruit, savoury layers and a fine-grained palate. Match with lamb shoulder roast or venison steak over the next 8+ years. Handpicked, fermented with 6% whole bunch with indigenous yeasts to 14.1% alc over 9 days, total time of skins 18 days. Aged in French oak barriques for 12 months, 26% new oak.
