85% Pinot Noir from D.O. Cava Cstere del Segre, 15% Macabeo, Xarel-lo and Parellado from the Penedes, the Pinot Noir given 3-4 hours skin contact, the fruit fermented to 11.5% alc. and 8-10 g/L dosage, the wine aged 12 months on lees. Moderately deep, strawberry-pale red in colour with a little orange, lighter on rim. The bubble is fine and the bead moderately persistent. The nose is delicate and tightly bound with subtle raspberry and cherry fruit entwined with mouthwatering herbal and mineral nuances. Red florals lift the aromatics, and the nose reveals savoury nutty elements. Dry to taste and medium-bodied, light flavours of savoury cherry and raspberry fruit show alongside herbs and earthy notes. This has a soft-textured core with rounded acidity and subtle mousse. A light, drying phenolic line carries the wine to a thirst-quenching raspberry and bitter cherry flavoured finish. This is a soft, red-fruited sparkling rosé with savoury flavours drying palate.
