Monastrell, Garnacha and Trepat given 3-4 hours skin contact and fermented to 12.0% alc., with 8-10 g/L dosage, the wine aged 9 months on lees. Bright, light salmon-pink colour with a touch of garnet on rim, the bead very fine and persistent. This has a full, softly fresh bouquet with red florals and red berry fruits entwined with nuances of herbs and bready-yeast autolysis. Dry to taste, gently luscious and sweet red berry fruit flavours are melded with delicate yeasty autolysis interest. The mouthfeel is creamy from the effervescence and balanced by crisp and clean acidity and refined textures that lead to a dry finish with red floral elements. This is a refined, delicately fruity Cave rosé with autolysis interest. Serve as an aperitif and with tapas or dim sum over the next 2 years. 17.5/20 Feb 2014 RRP $24.95
