Deep purple with a ruby core, lighter on the rim. The bouquet is elegant and ethereal, with lifted aromas of red and black cherry, raspberry, hibiscus, herbs, spice and undergrowth. Medium-bodied, aromas of cherry and raspberry entwined with hibiscus, black pepper, cinnamon and undergrowth. The fruit is concentrated yet delicate with great depth, slowly enveloping ginseng, liquorice and whole stem fragrance. Silky tannins flow with lacy acidity and draw a long, elegant finish. This Gibbston Pinot Noir shows elegance, delicate flavour and details with depth on a silky mouthfeel. Match with quail and duck over the next 8+ years. Fruit from Gibbston, handpicked, clones 115, 10/5, 777, 5. Wild fermented with 20% whole bunch to 13% alc, aged 10 months in French oak, 28% new oak.
