Bright, ruby-red with transparency, lighter on edge. The nose is fragrant, softly-full with aromas of black cherries, blackberries, sweet liquorice melded with dry herbs and black pepper with an earthy underlay. Medium-bodied, aromas of black cherries, blackberries interweave sweet liquorice with some depth. Black pepper spice growing more prominent, along with thyme, oregano; enriched by brown mushrooms and earthiness. Flavours are integrated and in harmony; amplified black pepper added appeal. Soft palate with refined tannins, linger with subtle floral details. This is Gibbston Pinot Noir in a harmony of black fruit, herbs and earth on a smooth, silky palate. Match with venison loin and lamb over the next 3-5 years. Pinot Noir clones 115, 10/5, 777, 5 from Gibbston sub-region. Handpicked, 100% destemmed, fermented to 14% alc.
