Bright, light creamy-yellow, even colour throughout. The nose is soft, nuances of savoury toned fruit intermix green capsicum. The bouquet slowly opened up to zesty citrus, along with subtle elderflower fragrant and creamy lees element. Medium-bodied, dry on the palate, aromas of lime, apple with green capsicum underlay; white pepper and elderflower followed, alongside a fine phenolic texture and creamy flow. Bright acidity balanced by creamy lees, broaden the palate with roundness entwined with the phenolic grip, providing the body and mouthfeel. Mouthwatering acidity remains on the palate with juicy lime and elderflower with good length. This is a classy Sauvignon Blanc with classic green lime and capsicum flavours, along with elderflower and a fine-phenolic-textured creamy palate. Match with crisp-skin blue cod with beurre blanc and pork chop over the next 2-4 years. Fruit from 25-year-old vines in Gibbston sub-region. Fermented in stainless steel to 12% alc, 1.1 g/l RS. A portion of grapes was foot stomped, and 20% wild fermented. 517 cases produced. 18/20 pts (90 pts) Nov 2020 RRP $27
