Bright, even, pale straw yellow. The nose is softly savoury with aromas of green apple, green papaya, fresh herbs and jasmine. Medium-full bodied, aromas of green apple, green papaya entwined with basil, chervil, and jasmine, unfolding kaffir lime and flint. The mouthfeel is almost chalky with fine-textured phenolics. Invigorating acidity carries savoury, flinty details to a long, crisp finish. This Sauvignon has a refined structure, displaying flint, savoury elements, and a fine acid line. Match with clams & seaweed butter and goat's cheese cannelloni over the next 5+ years. Handpicked fruit from Gibbston subregion, 10% light traditional foot stomped, with 3 hrs skin contact, 100% whole bunch pressed prior to barrel fermentation in large format, 30% new French oak, aged for 10 months.
