Bright, even, pale yellow with some depth. This has a complex, full bouquet with aromas of flint, struct-match, savoury lees elements underlying ripe stonefruit and citrus. Full-bodied, the palate is complex yet vibrant, aromas of stonefruit, citrus preserve enriched by flint and barrel spice, savoury lees, contributing subtle almonds, puff pastry nuances. Excellent acidity persists and cuts through the multi-layered richness of secondary elements, providing strength and length to the creamy palate. Barrel fermentation details of flint, struct-match are well-proportioned, complimenting the yeasty autolysis and subtle development of spice and nutty notes. This is an intriguing, complex barrel-fermented Sauvignon Blanc with great balance and precision. Match with pesto & goat's cheese risotto and roasted quail over the next 5-8 years.
