The third ‘Animus’ red. 85% Pinot Noir and 15% Syrah organically grown from vines 14-28 y.o. from the ‘Home’, ‘Devotus’ and ‘Dodds’ vineyards, indigenous yeast fermented to 12.5% alc. with 20% whole bunches, the wine aged 12 months in 20% new French 700 L oak barrels. Full, dark, ruby-red colour with light garnet hues on the rim. This has a soft and voluminous bouquet of savoury red berry fruits entwined with layers of game, dried herbs and resinous, nutty oak nuances. With aeration, red florals emerge with blackberry fruit and black pepper from the Syrah, forming a firm core. Medium-full bodied and elegantly presented, the palate features a softly concentrated heart of ripe dark red berry fruits and red florals that reveals spices, black fruits and pepper. The fruit is sweet and enriched by fresh, lively acidity, and the wine underlined by very fine-grained, soft tannin extraction. This has a gentle drive and linearity that leads to a light, dry, lingering finish of black cherries and pepper. This is an elegantly presented and softly concentrated Pinot Noir with peppery Syrah elements that emerge with aeration.
