Bright, very pale straw colour, near colourless, with very fine bubbles and moderately persistent bead. The nose is delicate and soft in presentation, clean and fresh, with gentle passionfruit, green apple and acacia floral aromatics. Off-dry to taste, this is very fine-featured with an elegant and gentle core of passionfruit, herb, apple and citrus fruit flavours. The mousse is soft and creamy and is balanced by fine, dry phenolic textures. This is harmonious and easy. Light and lacy acidity underlines the palate and wine flows smoothly to a subtly nuanced, mouthwatering finish. This is a soft and delicate, smooth and easy, gently dryish Sparkling Sauvignon Blanc. Serve as an aperitif, with canapes and salads over the next 18 months to 2 years. Fruit from the 2014 harvest, fermented to 8.76% alc. and 7.8 g/L RS, TA 7.3 g/l and pH 3.28, the wine carbonated.
