Deep, ruby-red with a tinge of garnet shade, slightly hazy, lighter edged. The nose is gently full, sweet and spicy; nuances of red cherries, young plums intermix liquorice roots, tree bark, floral perfume and earthy layers. Medium-full bodied, aromas of florals, spices and earth washed over by red cherries, sour plums. Pu-er tea tannin and fragrant is mouth-filling, provides some grip. Vibrant acidity is bright and awakening. This is an edgy, red-fruited unconventional Pinot Noir, with floral perfume and a fine tannin grip. Match with yakitori and grilled barbeque pork belly over the next 3 years. Organic & biodynamic Pinot Noir from south-facing Profilo Block, Netherwood Vineyard. Handpicked, whole bunch fermented with vineyard yeast to 12% alc in Amphora and aged in the same Amphora. No added sulphur. Unfined and unfiltered.
