Deep, dark purple with a ruby hue, slightly lighter on the rim. The nose is softly full, gently penetrating Damson plums' aroma, cherries interweave mineral and spices, along with a whiff of violet and fresh thyme. Medium-full bodied, deep nuances of dark herbs, black pepper and violet, melded with liquorice, Damson plums, cherries. The mouthfeel is filled with softly extracted fine-tannin, left a silky veil. The fruit has concentration, showing density and richness; precise acidity flows to a sustained finish with black tea fragrance. This is a dark-toned fragrant Pinot Noir with attention and precision on a powdery, fine-textured palate. Match with braised pork cheek and pulled lamb shoulder over the next 5-7 years. Fermented with vineyard derived yeast to 12.5% alc, 28 days skin contact. Unfined and unfiltered, minimal sulphur added at bottling.
