Bright straw-yellow colour with slight green hues, pale edged. The nose is firmly packed with deep aromas of herbs and fennel, wet stone and minerals along with subtle nutty notes. The aromatics are taut and are somewhat austere and tightly bound. Dry to taste and medium-bodied, the palate is intense and concentrated with flavours of fresh herbs, waxy and lanolin elements, fennel, wet stones, minerals and nuts in a complex amalgam. The mouthfeel is balanced with fresh acidity and a light textured phenolic line. This is fresh and lively, and the palate carries to a light, lingering, herb-nuanced finish. This is a taut and concentrated Gruner Veltliner with fresh herb, fennel, waxy and nutty notes, and a fresh, fine-textured, balanced palate. Serve with herb-marinated white meat dishes over the next 3+ years. Fruit from the ‘Headwaters’ organic block, Wairau Valley, fermented in tank and finished in oak puncheons to 12.0% alc. and 1.8 g/L RS, the wine given 4-6 hour skin contact and aged on seasoned oak with batonnage.
