Dark, deep, ruby-red colour with some youthful purple hues, this has a soft, shy nose of blackcurrants, herbs and earth with complexing floral and oak notes. An elegant, medium-weighted wine, this has softly expressed blackcurrant, plum and herb flavours showing some sweetness and lift. Moderate tannin extraction provides grip and structure, and good acidity lends freshness and some length. 55% Cabernet Sauvignon and 45% Merlot ‘Ecocert certified organic from the Herault department of the Languedoc. Fermented to 13.5% alc., 25% of the wine was aged 4 months in new oak, the remainder in stainless-steel. Made by Jean-Claude Mas, aka ‘The Humble Winemaker'. Match with pasta, grilled and roasted red meats, and firm cheeses over the next 3-5+ years. 16.5+/20 Jul 2011 RRP $23.00
