Pale straw-yellow, near colourless on rim, sparse but fine bubble with modest persistence. The bouquet is up-front with aromas of white stonefruits and nuts, melded with autolytic lees and yeast nuances, building in depth revealing soft chalky nuances. Dryish to taste and medium-light bodied, this is elegant and slender in presentation with bright, light white floral and stonefruit flavours. The palate is crisp and mouthwatering with very fine, dry textures that merge seamlessly with the mousse and effervescence. The acidity is integral, but refreshing. The aromatic floral notes recede, leading to a clean, soft, light and dry finish. This is a crisply dry and elegant Blanc de Blanc sparkling with a yeast-influenced bouquet and floral flavours.
