Valpolicella is based on the Corvina, Molinara and Rondinella varieties. The Ripasso method involves the young wine being re-fermented on the skins of Amarone grapes for greater depth of flavour. At 13.5 % Alc., this wine was aged over 12 months in French oak barrels. Veull full, deep, dark ruby-red colour with garnet hues on edge, this has a very aromatic, intense nose of dark cherries, herbs and florals in a complex amalgam. Medium-weighted, this is a finely proportioned wine on palate with savoury dark cherry and berry flavours, along with nuances of cassis, game meat and mushrooms. The tannin extraction is fine-grained and the acidity enhances the fruit sweetness. Drink this well-balanced, flavoursome wine with most poultry, pork and red meat dishes over the next 4-6 years. 17.0+/20 May 2011 RRP $33.80
