Alpha Domus ‘AD The Aviator’ Hawke’s Bay 2007

Cabernet Sauvignon from New Zealand - Hawke's Bay
Review Date : 30-Aug-2011
A blend of 36.4% Cabernet Sauvignon, 27.3% Cabernet Franc, 22.7% Merlot and 13.6% Malbec, given a cold soak and barrel-fermented to 14.0% alc., with 17 months aging in 75% new French oak. This is dark, deep, ruby-red in colour and has a fine, fresh, but densely packed nose of dark plum and berry fruits with cinnamon spice notes and perfumed lift. A very fine-featured, firm and tightly concentrated palate carries ripe dark plum, liquorice, dark red berry and black pepper fruit flavours. The wine is beginning to soften, and the acidity is moderately expressed. The wine has a sustained finish of ripe plum and cedary oak nuances. This still has youthful, primary perfumes, but is just starting to soften. It will drink well over the next 8-10 years.  Aug 2011
