The super-premium label of Chalk Hill. 100% Cabernet Sauvignon from the ‘Winery Old' block, given a cold soak and fermented to 14.0% alc., the wine aged 20 months in French oak. Very dark, very deep, purple-hued black-red colour, near impenetrable. Rich, ripe blackcurrant and black plum aromas, laced with spicy oak show with decadence and density. Full-bodied, sweetly rich, but well-defined blackcurrant and black plum flavours form a concentrated and dense core with excellent palate drive and line. The mouthfeel is smooth and luxurious with very fine tannins, balanced by good acidity, providing vibrancy and vitality. A long and sustained finish with flavours of plums and blackcurrants completes the wine. This rich and decadent but vibrant Cabernet Sauvignon will keep for 10-15 years.
