  Bright, pale straw-yellow, even colour throughout. The bouquet is expressive, leaping out of the glass with aromas of sweet pear, yellow apple and melon suggestions, entwined with rich white floral and spice. Medium-bodied, dry to taste, attractive, fresh aromas of Nashi pear, yellow apple enlivened by five-spice, white blossom and minerals. The fruit has concentration and freshness; lively, juicy acid thread carries the fruit to a long, spiced, dry finish. An irresistible, oily texture provides an opulent mouthfeel, shaped and curved a textural body. This elegant Pinot Gris possesses defined details of fruit, spice and texture and a crisp, lasting finish. Handpicked, whole bunch pressed, naturally fermented to 13.5% alc, 1.83 g/l RS, aged on lees for 6 months, underwent MLF.   Deep, ruby-red with dark purple hues, lighter on edge. This has an enticing bouquet with black raspberries and cherries melded with thyme and sweet spice. Medium-full bodied, nuances of dark cherries, raspberries have a mineral edge, interweave thyme, sweet vanilla, star anise, black pepper and cloves. The fruit has excellent ripeness with concentration, showing multi layers and dimensions. Fine-grained, silky, tight-knitted tannins provide structure and grip. Lacy acid thread carries the core of fruit and sweet spice to a lingering, broody finish. This black-fruited Pinot Noir has structure and silky mouthfeel filled with delicate spice and mineral elements. Match with hare and lamb rack over the next 8+ years. Handpicked from Estate vineyard in Bendigo, fermented in small batches with a small percentage of whole clusters, cold-soaked for up to 7 days, indigenous yeast fermented to 14% alc, post maceration, total time on skins 19-24 days.   Deep, ruby-purple, faintly lighter on the rim. The nose is gentle, slowly releasing dark herbs and violet, intermixed black fruit, minerals and spice. Medium-full bodied, silky on the entry, releasing aromas of black cherries, blackberries and Doris plums alongside violet and thyme fragrances, cloves, peppercorns and nutmeg. A dark mineral element lifted the black fruit and added interest. Balanced, integrated acidity support and lengthen the palate, and spice draw a long line and persist in the closing. Creamy texture melded with finely weaved tannin structure framed an elegant core. This broody Pinot Noir shows dark fruit and mineral elements with finesse and refined form, velvety tannin grip is built to last. Match with venison loin and wild boar over the next 8-10 years. Handpicked from Estate vineyard in Bendigo, fermented with 10% whole clusters, cold-soaked for up to 7 days, indigenous yeast fermented to 14% alc, post maceration for 6 days, total time on skins 21 days.
